Gluten Free Weekly Meal Plan: May 25-29, 2015

Hard to believe we're heading into the last week of May! This Celiac Awareness month has gone by quickly, but this year I saw more awareness posts and activities than ever before. Monday: Shepherd's Pie












Tuesday: White Bean & Chicken Meatball Soup










Wednesday: Spaghetti with Sun Dried Tomatoes, Artichokes, and Mushrooms
Cook the pasta according to package directions. While the pasta is cooking, in a pan sautee chopped garlic, a 250g jar of sun dried tomatoes (drained, oil reserved), a 250 jar of artichokes (drained), and 250g sliced mushrooms in a few tablespoons of oil. Season with salt and pepper. Drain cooked pasta, then add vegetables. Pour a bit of the reserved oil from the tomatoes, just enough to coat and add flavour. Add grated Parmesan to taste.







Thursday: Thai Curry Stir Fry With Rice Noodles
I use a frozen mixed vegetable bag just to make my life easier, including carrots, cauliflower, and broccoli. Add whatever vegetables you like. I use Summer Fresh Thai Curry Sauce, but any gluten free Thai Curry sauce will do. Cook the vegetables in the sauce while you cook the rice noodles according to package directions. Drain the noodles, then add them to the veggies and sauce. Mix to coat, then serve.








Friday: Gluten Free Sloppy Joes
Make these leaner with ground turkey or chicken instead of beef.
