The kids are still on Spring vacation here in Paris, and we're heading to Spain for the week. This week's meals are some tried and true favourites that are like always, gluten free & simple to put together.

Monday: Roast Vegetable & Goat Cheese Sandwich
This is easy to make with frozen or jarred roast vegetables, but I like to roast them myself in the oven. Spread some goat cheese on a gluten free bun, and done! If you can't find gluten free buns where you live, you can make these with pasta instead.

Fry up the pork chops, place the asparagus in the oven drizzled in a bit of olive oil, and stir in a teaspoon of Dijon mustard in a 1/4 cup of plain yogurt.

A great filling salad that reminds me of the beach in Nice every time I eat it! Plus, it uses up any leftover asparagus from last night's meal.

Heat up a pot of gluten free vegetable broth, grate in some ginger and add a bit of minced garlic. Add in the rice noodles. When cooked, top with cilantro (or parsley).

Gnocchi is my absolute favourite pasta, but if you can't find it gluten free, substitute any gluten free pasta you happen to have on hand. To cook gnocchi properly, you must be ready with a slotted spoon. They only cook for a few minutes. When they start popping up to the surface, scoop them out. It means they're done.
