Gluten Free Weekly Meal Plan April 13-17, 2015




Welcome to the weekly meal plan!

Every Saturday I'll be posting 5 weeknight meal ideas that are gluten free and easy to put together. They're all meals that we eat at my house and that my two young boys enjoy.

 Monday: Baked BBQ Ribs with Mashed Potatoes and Corn
I like Cattleboyz Sauce or Sweet Baby Ray's Sauce, but any gluten free sauce will do. Place the ribs in a roasting pan, cover with sauce, and cook covered at 350F until cooked through. Stir and flip the ribs every so often.





Tuesday: Chickpea & Vegetable Stir Fry
Cook your favourite vegetables in a bit of sesame oil (regular oil will do), grated ginger and minced garlic until cooked but still crisp. Add in a can of drained chickpeas, then season with gluten free soy sauce. San-J makes and Thai Kitchen both have gluten free versions.







Wednesday: 20 Minute Mac 'n' Cheese
I've yet to find a store-bought gluten free version that everyone likes and tastes like real cheese to me. This recipe is simple, and pretty much only takes as long as the water needs to boil and the pasta needs to cook.
       






Thursday: Chicken with Tomatoes & Black Olives
You could leave out the olives and substitute artichoke hearts or even a can of vegetable antipasto, well drained. Even green olives would work, but be aware that they tend to be saltier than black olives.







Friday: Gluten Free Spinach & Mushroom Quiche (Using Bob's Red Mill Pie Crust Mix)
This quiche recipe can be modified to use whichever vegetables you wish. You could also add bacon or chopped ham.
