We're a few weeks out from moving day, and we've been packing up the house so that we're not scrambling at the last minute. Meals have been quick and easy, and this week will be no exception.
Monday: Gluten Free Hamburger Squash (I like this one because it looks good, and is a complete meal all in one. It's also easy to make.) RECIPE
Tuesday: Roasted Chickpea and Cumin Soup (Gluten & Dairy Free. Vegan) Takes about 15 minutes from start to finish.) Serve with a green salad and some garlic bread made with a gluten free baguette.
Wednesday: Gluten Free Lentil Salad RECIPE (Vegetarian)
Thursday: Pork Chops and Sauteed Green Beans from the garden.
Friday: Roasted Vegetable Sandwich with Goat Cheese, on a Gluten Free Bun (Vegetarian)
