Gluten Free Weekly Meal Plan (June 9-13, 2014)

Our house has been listed for sale, which means that we need to be able to vacate the premises for viewings with little notice. As a result, this week's recipes are pretty much 1 pot meals that are easy to make and don't need a ton of pots and pans to put them together.




Monday: Green Pea Soup with Gluten Free Garlic Bread (2 cups frozen peas, 4 cups gluten free vegetable or chicken broth, some mint leaves if desired. Season to taste, then blend smooth.)















Tuesday: Rice Vermicelli with Mixed Vegetables in a Thai Sweet Chili Sauce (Boil rice noodles, then mix in a large pan with frozen mixed vegetables and a bottle of gluten free Thai Sweet Chili Sauce.)














Wednesday: Gluten Free Spaghetti and Meatballs
















Thursday:Vegan Quinoa Soup (Recipe)






Friday: Beef Tacos or Nachos
