Gluten Free Weekly Meal Plan (May 26-30, 2014)

This is turning out to be a beautiful weekend, with the sun shining and temperatures that finally make it feel like spring. I don't want to spend all day in the kitchen on days like this, and I imagine you don't either. Here are some simple gluten free meal ideas to get you in and out of the kitchen in no time.

Monday: Minestrone Soup with Gluten Free Garlic Bread

Tuesday: Caesar Salad Stuffed Chicken Cutlets on a bed of Spinach Salad

Wednesday: Tofu & Vegetable Stir Fry over Rice using Gluten Free Soy Sauce

Thursday: Middle Eastern Inspired Stuffed Eggplants (Vegan) (RECIPE)

Friday: Chicken & Avocado Tacos (Cook up chicken strips, then toss with fresh salsa and cubed avocado. Serve on corn or gluten free flour tortillas with toppings of your choice.)
