Monday: Gluten Free Sun Dried Tomato, Spinach, and Ricotta Pasta (This is a variation of this recipe.)
Tuesday: Ceviche (RECIPE)
Wednesday: Oven Baked Ham with Mixed Vegetables and Fried Yucca (French Fries would work too!)
Thursday: Gluten Free Breaded Chicken Strips (I fried these, but my recipe for baked chicken nuggets and sweet potato fries is HERE) & Green Beans
Friday: Vegetarian Tofu Stir Fry with Cashews (This is my copycat recipe of the dish I always order from my local Vietnamese restaurant. I fry the tofu lightly first, then remove it from the wok before adding the rest of the vegetables and cashews. A bit of cornstarch dissolved in water makes a bit of a sauce, and grated ginger and a splash of fish sauce add flavour).
