The Eggs Factor is Back! Feed a Child, and Enter to Win an iPad Mini!




This year marks the third anniversary of the Egg Farmers of Ontario's "The Eggs Factor" contest, where contestants of all ages can decorate a virtual egg, and be entered into a contest to win an iPad mini!






The best part about this contest is that in decorating an egg, you're also giving back to the community. For every virtually decorated egg, the Egg Farmers of Ontario will donate one dozen eggs to school nutrition programs! When the contest is over, two lucky winners from each of the six age categories will win iPad minis!

This contest runs from March 25-April 22, 2014.

The age categories are as follows:
0-8 years, 9-12, 13-18, 19-29, 30-49, and 50+.

That means that this contest is open for both the young and the young at heart! Entries will be judged by three local Ontario egg farmers, who will narrow the competition down to six entries from each category. Then it's your turn to vote! Last year, over 13000 votes were cast to decide the winners in each age category. Could your egg be one of this year's winners? My family loves eggs, and my boys eat them every chance they get. From scrambled to fried, in a quiche or an omelet, eggs are a hit around here. The Egg Farmers of Ontario were kind enough to let me share a great, kid-friendly, gluten free egg recipe. I hope you like it!

Egg Salad Boats


Egg Salad Boats. Add some Gluten Free Crackers!




Egg Salad is an old favourite, and this is a great way to ditch the bread but still enjoy the distinct flavour of egg salad.







Ingredients

8 hard cooked eggs, peeled and finely chopped
1/4 cup (60 ml) light mayonnaise
2 tbsp (30 ml) sweet pickle relish
4 tsp (20 ml) yellow mustard
4 large ribs celery
1 English cucumber

Directions

1- Stir the eggs with the mayo, relish, and mustard until well combined.
2- Trim the celery and cut into 4 inch pieces. Cut the cucumber in half lengthwise, scoop out and discard the seeds, and cut the halves into 4 pieces, to make 8 hollowed out boats.
3- Spoon egg salad into veggie "boats" before serving.
