Usually my meal plan is up on Sundays, but this weekend was my niece's birthday party as well as my husband's birthday, so it's up a day late. Forgive me? Here's what we're eating in our gluten free house this week.
Monday: Gluten Free Spaghetti & Meat Sauce
Tuesday: Mushroom Soup
Wednesday: Stir Fried Vegetables and Tofu (I slice the tofu into thin triangles and lightly fry them to keep them firm and crispy, and then add them to the stir fry at the end. The kids will eat it like that!)
Thursday: Fish Tacos (Bake, then flake firm white fish, add crunchy curtido or grated cabbage and carrots, and top with diced avocado and whatever sauce you like. Serve with yucca, fries, or veggie of choice.) Curtido Recipe
Friday: Indonesian Chicken Curry and Mango Salad
