Gluten Free Weekly Meal Plan (February 24-28, 2014)

Today is our son's 5th birthday party, so I made sure to get everything cooked in advance. Here's what we're eating this week!








Monday: Lentil Soup RECIPE




Tuesday: Coconut rice and Stir fried chicken & leeks in a Thai Mango Sauce (Rice: Replace water with coconut milk and cook as usual. Chicken: Stir fry leeks, carrot sticks, cubed chicken & mango slices in Thai Kitchen's Spicy Thai Mango Sauce. It's not too spicy, and the flavour is fantastic. It's a gluten free sauce.






Wednesday: Veal Pizzaiola with Potato Wedges (Veal cutlets with tomato sauce & black olives, baked potato wedges)







Thursday: Eggplant Bake & Spinach Salad





Friday: Grilled Vegetable Wraps (Grill or roast vegetables in some olive oil & herbs, wrap in corn or gluten free flour tortillas & top with goat cheese)
