Tuesday: Roasted Red Pepper & Tomato Soup (RECIPE)











Wednesday: Roasted Beet & Sweet Potato Salad
(Roast vegetables in the oven w/some olive oil, salt & pepper, the toss with mixed greens, shredded cabbage, and crumbled cheese with dressing of choice)





Thursday: Beef & Black Bean Chili over Sweet Potatoes


















Friday: 20 Minute Mac 'N' Cheese (RECIPE)
