Gluten Free Weekly Meal Plan (Jan. 6-10, 2014)

Welcome to the first menu plan of 2014! I'm changing the title to Gluten Free Weekly Meal Plan because I think it's more accurate. I've been posting weekly meal plans each week since 2011, and it's one of the more popular features of the blog. It's not always easy to come up with meal ideas that are gluten free, easy to put together, and kid-friendly, so I'm happy to be able to make that process a little bit simpler. My goal this year is to eat a wider variety of healthy foods, which means including less read meat, more fish, and a wider variety of vegetables, legumes, and fruit. Here's to another great year of delicious dinners!



Monday: Homemade Gluten Free Pizza using Bob's Red Mill Pizza Mix (Click here for my product review of this mix.)








Tuesday: Steamed White Fish with Broccoli & Carrots
(I placed the vegetables on the bottom level of a steamer and the fish on top. When cooked, I drizzled olive oil, salt & pepper over everything and added a squeeze of lemon to the fish.)




Wednesday: Steak Fajitas with Corn Tortillas
(Season thinly sliced steak strips with salt & pepper, fry vegetables and meat separately in a little oil, and serve with diced tomatoes, shredded lettuce, salsa, and sour cream if desired.)







Thursday: Tortilla Soup (Mexican Style Soup w/Chicken, Hominy Corn, and Tortilla Strips) My husband makes this: broth, shredded chicken, grated carrots, hominy corn, tomato paste, cilantro, and toasted tortilla strips.








Friday: Sun Dried Tomato Pasta with Spinach, Walnuts, and Feta Cheese (RECIPE)
