
Monday: White Bean, Spinach & Chicken Meatball Soup (RECIPE)

Tuesday: Risotto and a Green Salad
Wednesday: Eggplant, Tomato and Egg Served on a Bed of Rice (I can actually see this being a great breakfast wrapped in a tortilla.)
Thursday: Sausage Stuffed Poblano Peppers (RECIPE)

Friday: Chicken & Vegetable Soup (To get me through the weekend!)
This just mixes broth, chopped chicken, frozen mixed vegetables, and some herbs to taste. Easy & a family favourite.
