Holiday Appetizer #3: Quesadilla Bites

Everyone loves appetizers that are cheesy, crispy, and can be dipped. These quesadilla bites are perfect for little fingers as well as adult tastes, and the flavours can be adapted and changed to suit the audience. These take no time to put together, and are inexpensive to make. Definite crowd pleasers!

Holiday Appetizer #3 Quesadilla Bites

(For 24 wedges)
6 Corn Tortillas
1 cup Grated Cheese (Cheddar, Mozzarella, or Similar)
Olive Oil or Butter for Frying
For Serving
1/2 cup Sour Cream
1/2 cup Salsa
1- Lay tortillas out on a flat surface. Cover one tortilla in cheese, and top with another. Repeat with remaining tortillas.
2- Heat a small frying pan over medium-high heat. Place a small amount of oil or butter in the pan. Place one quesadilla in the pan and cook for about 1 minute on each side, or until cheese is melted and outside in slightly browned. Remove from heat and place on paper towel. Repeat with remaining quesadillas. ***These can be baked in a 350F oven until crispy instead of being fried.
3- With a sharp knife, cut quesadillas into 8 small wedges each. Arrange on a serving platter with sour cream and salsa for dipping.
For more variety, try adding black beans, diced red bell pepper, or roast chicken to quesadillas. Varying the dipping sauces can add variety as well.
