Many of you who read my blog regularly know that in addition to being gluten free, my son also has a very difficult time with cow's milk. We drink a lot of goat's milk, soy milk, and rice milk around here, and use a ton of dairy-free alternative products for cooking and baking. Still, I have to admit, Almond Milk was never really on my radar as an option. Sure, I saw it on the shelf, taking up space beside the other dairy alternatives, but my eyes would just skim over it to find the product I was already used to buying.

So when the nice people at Almond Fresh asked me if I would be interested in trying out their product, I said yes. I think I should add that my husband thought I was crazy, because, well, milk from almonds? Sure, he said, and I knew he was supressing an eye roll. Still, because he loves me, he went out and picked up a container of the Almond Coconut beverage. Then I pulled out two glasses and forced him to have some with me. Because, you know, if it was awful, I didn't want to suffer alone.
It wasn't awful. It was amazing. There was a light coconut flavour and a really fresh taste that wasn't overly sweet the way some dairy substitutes tend to be. To be honest, I never just have a glass of any of those substitutes, I always drink them in a smoothie or over cereal or some way that disguises much of their flavour. The Almond Fresh beverage is an exception. I've been having a glass every morning, and I'm not the only one. In fact, I almost forgot that I was supposed to be using it in a creative way, and was just drinking it straight.
So, I brought out the blender and got to work, adding it into my usual morning smoothies with great results. I've shared two simple recipes below, and can't wait to get working on some more. Almond Fresh is produced by a Canadian company and is only available for purchase in Canada at this time. The products are dairy and lactose free, gluten free, and non-GMO. This makes them perfect for my family.
Almond Coconut Chocolate Bliss Smoothie
This is a variation on my favourite smoothie, Chocolate Banana. The subtle flavour of almonds and coconut add that little something extra to this protein-packed breakfast smoothie.
1 cup Almond Coconut beverage
1 scoop gluten free chocolate protein powder of choice
2 ice cubes
Mix all ingredients in a blender until smooth. Simple, delicious, and filling. Enjoy!
What's that? You want something without chocolate? Here goes!
Feel like you should be swinging in a hammock with a little taste of the tropics.
1 cup Almond Coconut Beverage
1/2 cup pineapple chunks
2 ice cubes
Mix all ingredients in a blender until smooth. Thin with a little extra almond milk if desired. Serve with a mini umbrella for best results ;)
