Gluten Free Weekly Menu Plan

This week I was pressed for time.  I have a feeling that most of December might be this way.  The result?  Five weeknight meals that each took less than 30 minutes to prepare, yet are great dishes that taste fantastic.  Here's to simplicity in cooking!




Monday: Cobb Style Salad with Turkey, Tomato, Avocado, Egg & Blue Cheese 









Tuesday: Coconut Chicken & Lime Soup













Wednesday:  Gluten Free Creamy Artichoke & Spinach Pasta






 




Thursday: 5 Ingredient, 15 minute Chorizo & Chickpea Soup &amp










Friday: Coconut Sesame Chicken Strips & Quinoa Salad
