Thanksgiving Menu 2012

This year, like last, I decided to cook turkey, without cooking a whole big bird.  Last year I made a turkey pie.  To see last year's menu, click HERE.

This year, I've simplified things a bit because with a newborn in the house, my time is limited.  I did want to have a proper dinner though because my mother-in-law is here, and this will be her first Thanksgiving dinner, because they don't celebrate in El Salvador.  So in case you're still thinking about what to make for the big dinner, here's what we're having:

Turkey Breast Roast:  This is similar to a pork or beef roast, in that it's boneless and tied up and ready to go.  It only takes about an hour and a half to cook, and is all white meat.  I wanted turkey, but without all the work of cooking a whole turkey.  Hopefully this fits the bill.

Gravy (I use Imagine Organic Gravy- gluten and dairy free)

Mashed Potatoes

Cubed Butternut Squash with Butter and Sage

Spinach and Goat Cheese Salad

Zucchini Muffins

Pumpkin Pie with Whipped Topping

Gluten Free Cupcakes

White Wine Sangria

I'm happy with the menu, because it's simple but has the flavours of a traditional fall Thanksgiving menu.  Plus, I was able to prepare the potatoes and squash in advance, and my sister made the muffins ahead of time.  Today consists of tossing the salad, roasting the turkey and making the cupcakes.  After we get back from the pumpkin patch.
