I'll be on vacation from Wednesday, so instead of starting on Monday, I'm including what I ate this weekend, and then the plan for Monday and Tuesday.
Saturday: Whole Roast Chicken with Celery, Onions and Potatoes with
Homemade Gravy & Sauteed Mushrooms
Sunday: Spinach & White Bean Soup, Pan-Fried Sirloin Steak,
Potato Salad & my mom's homemade coleslaw
Monday: Quinoa & Mushroom Stuffed Peppers, Roast Cauliflower with
Balsamic Vinegar Drizzle & Gluten Free Bruschetta
Tuesday: Large Salad Tossed with Leftover Vegetables in a Sesame
Vinaigrette & Vietnamese Style Spring Rolls
